Before 1995, French cuisine monopolized the interpretation of haute cuisine globally—a form of structural violence where if you didn't follow canonical recipes, you existed outside the definition of 'fine dining.' Adrià didn't just rebel; by redefining 'molecular cuisine' as 'techno-emotional,' he successfully manufactured a new vocabulary and evaluation system outside the French hegemony.
Ironically, this 'rule-breaking' narrative, once packaged by TV dramas and government-funded tourism PR, becomes a sophisticated version of cultural violence. It frames an elite game with exorbitant costs and minimal accessibility as 'empowerment' and 'Yes, we can.' When a restaurant whose menu couldn't even cover its own costs—and whose seats were reserved for a tiny privileged few—talks about 'empowerment,' the narrative itself is a scam. It tricks subsequent chefs into believing that being 'avant-garde' grants them the power to define reality, while ignoring that this power still rests on extreme resource monopoly.
The legacy of El Bulli isn't that it made cooking just, but that it proved one thing: as long as you control the interpretation, even making a tortilla with crisps can be defined as a world-changing innovation. This leap from 'executor' to 'definer' is the core of all power struggles. As for the moved followers, they believe they inherited a spirit of innovation, but in reality, they inherited a new elite mechanism of complicity established by Adrià.
