Industrial agriculture is a conspiracy of "standardization." He stopped producing a "standard commodity" and started producing a cultural product with identity. By building his own mill and bypassing wholesalers, he seized the cognitive entry point and reclaimed the pricing power. The jump from £600 to £800 per tonne isn't a subsidy; it is the dividend of reclaimed agency.

This is the real good_news. It proves that when individuals stop seeking a fake optimal expression within a rigged structure and instead build a system of Just Expressions (direct trade, biodiversity), Actual moves toward Potential. However, we must be wary: as chains like Gail’s launch his sourdough, will this primal expression be weaponized into another bourgeois aesthetic symbol? If heritage wheat becomes a mere label for "luxury," it risks falling back into the cycle of cultural violence, becoming a barrier of taste to distinguish classes rather than a genuine ecological revolution.
