面粉的蛋白含量与中产阶级的审美 scamProtein Content and the Middle-Class Aesthetic Scam

Creating professional barriers through unnecessary redundancy is a micro-exercise of cultural violence in the kitchen.

A chocolate chip cookie recipe requiring both cake flour and bread flour, measured precisely to the ounce, is technically redundant. As a sharp commenter noted, the combined protein content is practically identical to all-purpose (AP) flour. But that is the essence of the narrative—it is not about the result; it is about the 'ritual.'

This so-called 'professionalism' is a textbook weaponisation of expression. By manufacturing unnecessary complexity (fussy), it establishes a fake barrier at the cognitive entry point of cooking. It suggests that you only deserve the 'best' texture if you possess two types of flour, a precision scale, and the patience for a 36-hour chill. This is no longer an expression of food; it is a screening process for class taste. It transforms a simple biological need into a performance of 'discipline' and 'refinement.'

The irony lies in the comments, where people share how simplifying the recipe or adjusting the sugar leads to their own optimal expression. This individual awakening is a rebellion against a micro-version of meta-violence: refusing to be defined by what is 'correct' baking and refusing to play the role of a disciplined executor in the kitchen. When someone realizes AP flour works just fine, they reclaim more than just time—they reclaim the power to define what 'tastes good.'
