The Pricing Power of Olive Oil and Bourgeois Complicity

Recipes are not about taste, but about filtering class by defining the 'correct' magnitude of consumption.

An NYT recipe is essentially a weaponized expression of 'taste.' Half a cup of extra-virgin olive oil for 3-4 servings is biologically and culinarilly redundant, but culturally, it functions as a precise filter. It defines a specific 'effortless' aesthetic—a privileged expression of wasting high-quality fats without calculating cost. If you question the oil volume in the comments, you are subconsciously flagged as someone still trapped in the survival game of cost-calculation, rather than a complicit member of this aesthetic loop.

This mode of expression is insidious; it packages class privilege as 'culinary advice.' When Melissa Clark suggests specific brands of canned beans, she is seizing the cognitive entry point to monopolize the interpretation of what constitutes a 'good bean.' This is no longer about sustenance, but an existential war: by setting minute standards for brands and oil quantities, a biological wall is erected to exclude those who are used to 'feeding 8 people with 2 tablespoons of oil' from the definition of 'sophistication.'

Most ironically, the commenters who 'optimize' the recipe with anchovies or Sherry vinegar are engaging in a deeper level of complicity. By demonstrating their 'tuning' ability, they compete for higher value within the established bourgeois framework. They do not challenge the absurdity of the system; instead, they affirm their superior status in the power structure by performing the role of a more professional gourmet. The so-called 'deliciousness' is merely the projection of this meta-violence narrative onto the taste buds.
