The Discarded Onion and the Erased Labor

Any elegance defined as "simplicity" is merely the erasure of concrete labor.

A tomato sauce recipe, a narrative of "minimalism." Marcella Hazan’s fame rests on telling the world that no complex spices are needed—only butter, onion, and tomatoes. In the cultural layer, this is packaged as a pure aesthetic, tricking people into believing they've captured the essence of life through "primary ingredients." But this "simplicity" is a weaponized expression; it reduces cooking from a complex biochemical game to a mere a-to-b instruction set.

The most ironic detail is Step 3: "Discard the onion." The onion provides the foundational flavor and endures the most grueling chemical reactions, yet it is ordered to vanish before the final presentation. This is a microcosm of structural violence in the kitchen: certain elements are defined as "necessary support," yet they are not permitted to enter the space of the final "achievement." The onion disappears so the dish looks "lighter," conforming to a specific bourgeois aesthetic.

Those in the comments trying to "optimize" the recipe with pancetta or chicken are engaged in a game for an optimal expression. They seek subjectivity within a predefined rule (the recipe), yet they remain complicit in the logic that this authoritative "standard answer" is the benchmark. A just expression isn't about adhering to an authoritative recipe; it is about acknowledging that whether it's the richness of butter or the sacrifice of the onion, both are results of concrete biological labor, not some divine "minimalism."
